Easy to prepare classic cookie recipes.


Chocolate Chip Cookies

2/3 cup shortening

1 cup sugar

2 eggs

3 cups self-rising flour

12 oz. pkg. chocolate chips

2/3 cup margarine, softened

1 cup brown sugar, packed

2 t. vanilla

1 cup chopped nuts

Preheat oven to 350 degrees. Mix shortening, margarine, sugars, eggs and vanilla. Stir by hand remaining ingredients. Drop onto greased cookie sheet 2 inches apart. Bake 8 – 10 minutes until light. (Do not overbake.) Makes 7 dozen. Recipe may be halved.

Heavenly Holiday Cookies

1 cup shortening (room temp.)

1 cup margarine (room temp.)

2 cup sugar

1 t. soda

1 T. corn syrup

3 eggs (room temp.)

5 cup plain flour

1 cup chopped pecans

1 cup green candied cherries

1 cup red candied cherries

1 cup chopped dates

Cream shortening, margarine and sugar until light. Add remaining ingredients one at a time in order given. (Mix in mixing bowl with all ingredients and 1/2 flour - put in large bowl to mix in fruit and other 1/2 flour.) Mix in nuts and fruit by hand. Form in small rolls and wrap in wax paper. Chill one hour or up to 3 weeks in refrigerator. (Can be frozen.) Slice and bake for 12 minutes at 375 degrees (do not overbake).

Thumbprint Cookies

1 c. butter or margarine, softened

3/4 c. powdered sugar

1/4 t. salt

1 1/2 t. vanilla

1 3/4 c. self-rising flour

1 1/2 c. raisin bran cereal

3/4 c. fruit preserves

Preheat oven to 375 degrees. Beat butter in large bowl until smooth. Slowly add powdered sugar and salt, beating until light and fluffy. Mix in vanilla and then stir in flour and cereal. With your hands, roll dough into 1-inch balls. Place on ungreased cookie sheets and, with your thumb, press an indentation in center of each ball. Bake for 10 to 12 minutes or until golden brown. Immediately remove from cookie sheets and cool on wire racks. Fill indentations with preserves.

Sugar Cookies

2 eggs, beaten well

1 stick margarine, softened

Mix together.

Add:

1 c. sugar

1 t. vanilla

2 c. self-rising flour

Mix well and drop spoonful onto lightly floured and sugared surface. Press with glass until round. Bake on lightly greased pan for 325 degrees until golden brown. (Do not overbake.)

Orange Slice Cookies

1/2 c. oil

1 box orange cake mix

1 small pkg. orange slices

2 eggs

2 T. water

1 c. nuts

Cut up orange slices. Mix all ingredients together. Spoon on an ungreased cookie sheet by tablespoons. Bake at 300 degrees for 10-12 minutes or until brown.
