Follow a healthy meal plan
with these low-calorie
and sugar-free recipes.


Low-Calorie Yum Yum

1 (9 inch) angel food cake

2 boxes sugar-free instant vanilla pudding mix

4 c. 2% milk

1 c. lite Cool Whip

6 pkg. sweetener

yellow food color

1 (20 oz.) can crushed pineapple (in own juice), drained well

1 (15 oz.) can tidbit pineapple (in own juice), drained well

1 medium banana, diced

Mix vanilla pudding with milk. Add Cool Whip, sweetener, food color, pineapple and banana. Cut about 1 inch from around top of cake and place upside down in round bowl. Cut remaining cake in chunks and mix with pudding mixture. Pour into bowl; chill. Top with additional Cool Whip and garnish with fresh strawberries.

Low-Calorie Snickers Pie

2 c. sugar-free vanilla ice cream

1 c. light Cool Whip

1/4 c. peanut butter

1 small pkg. sugar-free instant chocolate pudding, dry

3 oz. Grape Nut cereal

Mix and put into 8x8 inch pan and freeze.

Sugar-Free Strawberry Pie

4 pkg. Equal sweetener

4 T. cornstarch

1 small pkg. sugar-free strawberry Jell-O

graham cracker crust

1 1/2 c. water

2 c. strawberries

Combine sweetener, water, cornstarch and Jell-O in medium saucepan. Cook until mixture thickens and becomes clear. Let cool Add strawberries and pour into crust.

Sugar-Free Congealed Cherry Salad

2 1/2  c. unsweetened, crushed pineapple

1 1/2 c. unsweetened cherries

1 small pkg. sugar-free orange Jell-O

1 small pkg. sugar-free cherry Jell-O

12 oz. dark cola, diet

1 pkg. low-fat cream cheese

3 pkg. sweetener

Heat pineapple. Add Jell-Os, cherries and sweetener. Then add cola. Put in 9 x12 inch pan and gel. Add cream cheese for topping.

Diabetic Baking Apples

2 c. diet orange cola

dash of cinnamon and clove to taste

1 t. lemon juice

4 cooking apples, sliced

Put apples into baking dish. Mix soda, spices and lemon juice. Pour over apples; bake until tender.

Diabetic Potato Soup

2 c. skim milk

1 t. diet margarine

bacon bits, optional

pinch of salt and pepper

instant potatoes

dried onion flakes

Combine milk, salt, pepper and margarine; heat to a boil. Turn off heat and add instant potatoes. Stir until desired thickness. Add bacon bits and onion flakes.

Diabetic Punch

1 2-liter diet Sprite

1 (46 oz.) can chilled unsweetened pineapple juice

1 package blueberry Kool-Aid with Nutrasweet

Mix and chill all ingredients; pour in punch bowl and serve immediately.

Diabetic Key Lime Pie

1 (13 oz.) can evaporated skim milk

2 t. vanilla

2 envelopes plain gelatin

1/3 c. lime juice

1 c. boiling water

20 packages artificial sweetener

zest of 3 limes

green food coloring

Combine milk and vanilla and freeze for 30 minutes. Combine gelatin and juice in a blender. Let set for 1 minute. Add boiling water and sweetener; blend until smooth. Chill for 45 minutes. Put frozen milk into a small chilled bowl and whip frozen milk until stiff. Fold in lime zest. Slowly add the gelatin mixture to whipped milk. Spoon into 2 cooked pie shells. Garnish with lime slices and zest. Makes 16 servings.

Banana Cream Pie

2 c. skim milk

4 eggs, separated

8 packages artificial sweetener

1 t. banana extract

2 bananas, sliced

2 packets unflavored gelatin

1 t. vanilla

1/2 t. cream of tartar

1/4 t. nutmeg

Sprinkle gelatin in 1/4 cup cold milk. Heat remaining milk, and add gelatin mixture; stir over low heat until dissolved. Beat egg yolks and add to hot mixture, stirring constantly. When mixture thickens, add 4 packages of sweetener. Remove from heat; add vanilla and banana flavoring. Pour half of filling into an 8 inch pie plate. Place sliced bananas on top. Cover with remaining filling. Meringue: Beat egg whites until frothy. Add 1/2  t. cream of tartar, 1 t .vanilla. Add remaining 4 packs of artificial sweetener, 1/4  t. nutmeg and beat. Beat until stiff. Pile on top of banana filling. Put under broiler 1 to 2 minutes until golden brown. Refrigerate 4 hours before serving.

Easy Sugar-Free Dessert

1 small packages sugar-free Jell-O

2 c. hot water

1/2 package Crystal Light lemonade mix

2 c. cold water

3 c. Cool Whip

1 angel food cake, broken in pieces

Dissolve Jell-O in hot water. Add lemonade mix and cold water. Chill until slightly thickened, beat until frothy and fold in Cool Whip. Fold in cake. Chill in a 9 x 13 inch pan.

Diabetic Bread Pudding

1 slice white bread, cut in cubes

3 T. raisins

1 c. skim milk

1 egg, well beaten

2 packages artificial sweetener

1 t. vanilla

nutmeg, to garnish

Beat egg, milk, vanilla and sweetener together. Spray two-cup microwave dish with non-sticking vegetable spray. Arrange bread cubes and raisins in dish. Pour milk mixture over bread to moisten each cube. Sprinkle dash of nutmeg over top and microwave on high for five minutes or until knife inserted in center comes out clean. Be careful to not over bake.

Marinated Carrots

8 oz. cooked carrots

1/2 medium onion, cut in rings

1 medium green pepper, cut in rings

1/4 c. vinegar

1 T. Worcestershire aauce

4 oz. tomato juice

artificial sweetener to equal 1/2 c. sugar

1/2  t. mustard

salt and pepper to taste

Bring vinegar, Worcestershire, tomato juice, sugar and mustard to a boil. Add salt and pepper. Pour boiled mixture over carrots, onion and green peppers. Let stand until ready to use.

BBQ Chicken

Chicken, boiled, skinned, boned and chopped

1 can tomato juice

1 T. mustard

1 t. chili powder

artificial sweetener, to taste

1/4 c. vinegar

pinch of garlic powder

pinch of oregano

Mix all ingredients, except chicken, to make the sauce. Mix chicken and as much sauce as you like. Simmer 10 minutes and serve immediately.

Bar-B-Q Meat Balls

1 lb. ground chuck

1/2 c. skim milk

1 medium onion, finely chopped

1/2 c. diet catsup

2 T. minced green peppers

1 T. mustard

1 T. vinegar

1 T. minced onion

1 1/2½T. Worcestershire Sauce

2 packs sugar substitute

salt and pepper to taste

Mix meat, milk, onion, salt and pepper. Roll into balls. Broil until brown (approximately 15 minutes). To make sauce: mix catsup, green pepper, mustard and vinegar. Add minced onion, Worcestershire Sauce and sugar substitute. Pour over meatballs. Cook, covered, for 15 minutes at 400 degrees.
